Physical digestion is the first stage of digestion, where large pieces of food are broken into smaller pieces without any change to their chemical structure. This significantly increases the surface area of the food, making it easier for enzymes to access and break down molecules during chemical digestion.

  • Chewing (mastication) in the mouth: Teeth cut, tear and grind food into smaller pieces as you chew

  • Emulsification of fats by bile: Bile salts break large fat droplets into small fat droplets (this is classified as physical digestion because no chemical change to fat molecules occurs)

In the mouth, the teeth are the main tools of physical digestion. Humans have four types of teeth, each shaped for a different job in breaking food into smaller pieces.

  • Incisors: chisel-shaped teeth at the front of the mouth that bite and cut food into pieces

  • Canines: pointed teeth beside the incisors that grip and tear food

  • Premolars: teeth with raised cusps that crush and grind food

  • Molars: large teeth at the back of the mouth that crush and grind food into a fine paste
